Well let me start off by apologizing to anyone who bothered to read the title of last week's article. As is the case with all great writers, and apparently mediocre ones as well, I got off on a tangent and forgot to reveal the secret of the "crabby patty," so let me get to that first.

When you catch and eat a lot of fish throughout the year like we do, you begin to look for alternative methods to cook them. Awhile back I came across an article about making crab cakes out of crappie filets. I LOVE crab cakes, but very seldom do I come across fresh or affordable crab here in the Heartland. The first recipe was good, but after doing some research and a little trial and error, my wife has flat got it nailed down. The recipe is as follows:

1 bag of filets (I use sandwich bags)

1 sleeve of Ritz crackers, crushed

Half an onion and half a bell pepper, both finely chopped

1 egg

1 teaspoon each of garlic powder, dry mustard, salt, and Worcestershire sauce

1/3 cup mayonnaise
